Before bottling, no fining but a light filtration using pink earth. Degassing if necessary and sulfur adjustment according to analyses. Bottled on a fruit day. Pumpings are limited, and gravity is privileged throughout the vinification.

Pariot is Clément Lavallée's Aligoté, from a small plot of 35-year-old vines on a plateau facing east, on shallow clay and silt over limestone. It is picked by hand, ferments on its own yeasts, and ages for eleven months, partly in barrels and mostly in stainless steel.
