Domaine de Mouscaillo's Crémant de Limoux is a brut nature of Chardonnay, Pinot Noir and Chenin from two plots at 400 metres in Roquetaillade. The grapes are picked by hand, a little riper than is usual for sparkling wine, for a more vinous wine, and only the first juice is kept. It ferments and ages for eight months on its lees in old 600-litre oak barrels, then at least 18 months in bottle, and gets no dosage.
