Mouscaillo's Limoux Blanc 2021 is 90% Chardonnay with a little Chenin and Mauzac, from two plots at 400 metres facing north and south, on clay and limestone full of fossils. It ferments in large barrels of French oak, very few of them new, and ages on its lees for eleven months with stirring, then twelve months in bottle in the estate's cellar. A taut, lively wine with a touch of richness and a saline finish.
